Hoppin' John, also known as Carolina peas and rice, is a peas and rice dish served in the Southern United States. It is made with black-eyed peas (or red cowpeas such as iron and clay peas in the Southeast US) and rice, chopped onion, and sliced bacon, seasoned with salt. In some recipes, instead of bacon, ham hock, fatback, country sausage, or smoked turkey parts are used. A few use green peppers or vinegar and spices.

It is believed to bring good fortune and prosperity, especially when it is served with leafy greens such as collard, mustard, or kale. Sometimes a coin is hidden in the dish for extra luck. When leftover hoppin’ john is served the next day, it is called Skippin’ Jenny or Limpin’ Kate.
